Val di Sole cuisine is the perfect balance of simplicity and authenticity combined with top quality products that will conquer even the most demanding connoisseur. The delicate aroma of hay, the fragrance of freshly gathered herbs, the intense aroma of wild berries and the special bond between the people and the land are the secret behind each and every recipe.

Cheese is of course an essential ingredient in almost all of the local dishes, especially Val di Sole's Casolét cheese. And we can't possibly forget all of the locally produced cold cuts like speck and luganega that are still handmade made by family-owned businesses. Other special ingredients include mountain berries and honey plus aromatic herbs that give a unique flavour to the valley's simple, wholesome and exceptionally tasty dishes.

LOCAL PRODUCTS

DELICIOUS TEMPTATIONS

A typical product of the nearby Alto Adige area, it is also widely produced in Trentino. SPECK (smoked ham) is protected by the IGP trademark (Protected Geographical Indication). This ham has a rustic aspect and the smoking and aging processes used, give it a strong flavour which makes it saltier than prosciutto crudo (raw ham) and it can therefore enrich many types of dishes: pasta, game, vegetables and it is an essential ingredient for making canederli, a type of traditional dumpling that is made with old bread, parsley and speck.

Other products are also produced in Val di Sole such as SALAMI, SMOKED BACON and LUGANEGA (a popular pork sausage). «Luganega» is a traditional type of sausage that was used in all rural families.  It is eaten fresh and it is an important ingredient in many typical dishes: canederli (dumplings), smacafam (a baked buckwheat and sausage dish), crauti (sauerkraut). It is also an excellent cold cut when it has been aged.
