Val di Sole cuisine is based on simple dishes that use secret recipes dating back to grandmother's era. CASOLÉT CHEESE

A LISTED SLOW FOOD PRODUCT

Casolèt is a traditional Val di Sole cheese, once produced in great quantities. It is a typical MOUNTAIN CHEESE made with raw ingredients and whole milk. It was once made only during the autumn season, when the herds of cows had already been brought down from the mountain pastures, therefore there was much less milk being produced and casolet became the cheese that families ate on a daily basis especially during the long winter months. Its name has a Latin origin, it derives from «caseolus» which means small cheese and in fact the traditional dimensions of this cheese, which are maintained even today, are 7-12 cm per 10-22 cm, weighing about 1 kg.

CASOLÉT and the other excellent cheeses that are produced in Val di Sole can be directly bought at the various local dairies, farms or in the summer it is possible to go directly to the shepherds' huts.
